Banhez is a co-operative mezcal producers the village of San Miguel Ejutla in Oaxaca. Over 35 families produce traditional mezcal within the cooperative, all using recipes and methods passed down through these same families for generations. Banhez Tobala is created by Gonzalo Hernandes Bigotes using Tobala agave fermented with natural yeasts. Tobala is known for its notes of green mango and leather, and the mezcal has a refreshing herbaceous note.

Del Amigo is produced by Master Mezcalero Enrique Jimenez in the village of Santiago Matatlan in Oaxaca. Espadin agaves are grown to maturity, pit roasted, and then ground with a pink quarts stone wheel. The mash is fermented with the solids in open vats using wild yeast, a process that allows the true terroir of the region to be expressed. Finally, it is distilled twice in a copper pot still. Produced in a manner that pays strict attention to quality and tradition, this undiluted and unnamed mezcal is a testament to the art of the Mezcalero.

Blend of Espadin agave grown in a remote section of Oaxaca in the small village of San Luis del Rio. The agave is cooked in earthen pits for four days, a slow and traditional process that brings out the natural sugars in the plant. It is then milled with a traditional stone wheel and left to ferment naturally over seven to ten days. The spirit has an aroma of apples, mangos, and tropical fruits.

TASTING/NOSE
