Another wonderful Thanksgiving has completed and arguably the best part of the annual feasting tradition is here: leftovers.
There are dozens of recipes to follow on how to handle that turkey and stuffing, but what about the many, many bottles of wine that have gone unfinished? It seems far too sad to pour them out. Well, we have our three favorite ways to come to their rescue so you can use those opened bottles this weekend. Who knows, maybe it will inspire you to have a Friendsgiving just for the leftovers!
1. Red Wine Hot Chocolate
We’ve finally entered the season of cozying up and cuddling in. We know you’re already so over pumpkin spiced everything so we’re happy to introduce you to your newest seasonal obsession: Red Wine Hot Chocolate. That’s right, we’re taking your favorite childhood winter beverage and adulting it up with red wine. Trust us, it’s even more delicious and decadent than it sounds on a snowy day with holiday films streaming in the background.
Red Wine Hot Chocolate via The Kitchn
- 5 oz. dark chocolate finely chopped
- 2 tablespoons unsweetened cocoa powder
- 2 tablespoons packed brown sugar
- ¼ teaspoon of ground cinnamon
- 4 cups of whole milk
- Pinch of sea salt
- 1.5 cups of leftover red wine – you can combine a few bottles to reach this volume
Directions: whisk the chocolate, cocoa powder, sugar and cinnamon together in a large sauce pan. Add the milk and bring to a simmer over medium heat, whisk occasionally for about 5 minutes until smooth. Stir in salt. Remove from heat and add the wine.
Divide among 8 small glasses or mugs. Garnish with a cinnamon stick or a dusting of cocoa powder.
Sangria allows for a ton of flexibility depending on what you have leftover. Whether it’s white, red, rosé or even sparkling there’s a recipe that will work for you. The must-haves for sangria are fresh fruit, fruit juice, some fruity spirits and of course wine!
First cut up whatever fruit you have lying around. Considering the time of year apples, pears and even citrus make great additions. They impart a fresh flavor and soak up the wine making for a satisfying last bite.
Next pull together your three liquids. You need about a cup of fruity spirits such as brandy, orange liqueur or rum. Next, is about one full bottle of wine – which can be combined leftover wines. As long as they’re all in the same category i.e. all red or all white.
Lastly, you’ll want some fresh juice or mixers to sweeten up the pot. Even your classic OJ will be great here but if you have it, pomegranate juice or ginger ale can be even better.
Combine all of your ingredients and stir together unless they’re bubbly. Bubbly items can be added last upon serving. Store them in the refrigerator for at least an hour or up to one full day and pour over ice! For more ideas checkout the Anatomy of Sangria via WineMag.com.
3. Drunken Pasta
Okay, so this one is a real game changer. This classic Tuscan style dish – also known as Spaghetti All’Ubriaco – is probably our favorite on the list. This concept takes your leftover red wine and uses it as a cooking bath for a seriously mind-blowing spaghetti eating experience. As the pasta cooks it soaks up the rich fruity flavors of the wine making for a layered and complex dish finished with very few ingredients.
To start, pour about a bottles worth of red wine into a large pot. You can combine a few opened bottles to reach this volume. Leave about a half a cup of wine for finishing the sauce later. Pour in enough water so that it just covers the pasta but you want less cooking liquid than you would normally use. Season generously with salt. Cook the pasta until just al dente and strain into a sauté pan to finish with garlic, butter, olive oil, red pepper flakes and some fresh Italian parsley.
